Author Notes: This dressing is particularly good on Maple Cured Salmon (see links below for recipe).
Ingredients: 1/3 cup champagne or white wine vinegar
1 tablespoon maple syrup
1 teaspoon whole grain mustard
1 shallot, minced
1 cup vegetable oil
salt and pepper to taste
Instructions: Makes About 1 1/2 Cups

In a bowl, combine vinegar, syrup, mustard and shallot. Season with salt and pepper. Whisk in oil and refrigerate until needed.
