Author Notes:	While I especially like this dressing on spinach salads, it goes well on most any kind of green salad.
Ingredients:	2 tablespoons orange juice 2 tablespoons white wine vinegar 3 tablespoons olive oil (preferably extra virgin) 2 teaspoons honey 1 tablespoon chopped fresh cilantro 2 teaspoons Dijon mustard salt and pepper to taste
Instructions:	Whisk together all dressing ingredients (or use a mini food processor). Pour over salad and serve.
