Mushroom Paté

Author Notes: This wonderful, savory vegetarian paté is wonderful for entertaining served on crackers, crusty bread or even on raw vegetables, for a low carb treat. This is also a terrific picnic component.
Ingredients: 4 tablespoons butter
1 cup finely chopped fresh mushrooms
1/4 cup shallots, finely chopped
1/4 cup white wine
1/4 cup vegetable stock
2 scallions, white and green parts, minced
8 ounces cream cheese
salt pepper to taste
Instructions: In a large skillet, melt butter and sauté the mushrooms and shallots for 3 to 5 minutes or until tender. Add the wine and stock and simmer until the liquid has been absorbed. Remove from the heat and transfer to a bowl. Add the cream cheese, salt, pepper, and minced scallion. Mix thoroughly.

Serve warm or chilled.
