On my recent Wyoming trip, several members of our family fixed this magnificently simple salad. I went zonkers for it! It's easy, delicious, and can be served as either a salad or a dessert (or why not have it both times?) I think you'll consider serving it at a lot of your meals once you try it. For a low fat-low cal alternative, this mixture is also good with fat-free cottage cheese, sugar-free Jello, and reduced fat topping. You can use fruit canned in its own juice, too.

Ingredients: 1 small package Jello, orange-flavored
1 small can pineapple tidbits
1 can mandarin oranges
2 cups cottage cheese
8-12 ounces non-dairy whipped topping
Instructions: Mix dry Jello with cottage cheese. Drain juice from all fruit and discard. Mix fruit with Jello/cottage mixture. Fold in whipped topping. Chill before serving
