Author Notes: In addition to lots of great small space recipes, the book is especially great for novice RVers, new to packing and cooking in their rigs.
Ingredients: 1 cup shredded carrot (about 1 medium carrot)
1 large red Delicious apple, peeled and shredded (1 cup)
1/2 cup raisins
1/3 cup plain yogurt
1 heaping tablespoon mayonnaise or salad dressing
2 teaspoons sugar
1/8 teaspoon salt
Instructions: Mix all ingredients in a medium bowl. Serve immediately or cover and refrigerate until ready to serve.
