Ingredients: 8 cups flowerets of fresh broccoli
6 scallions, chopped with greens
1 cup sliced mushrooms
5 slices of crisp-fried bacon, crumbled
1 cup chopped walnuts
1 cup mayonnaise
1/4 cup vinegar
1/4 cup powdered malitol (or other no-sugar sweetener -adjust the carbs accordingly)
Instructions: Combine broccoli, scallions, and walnuts together in a large bowl. In a separate bowl mix together the mayo, vinegar and sweetener until well blended. Mix the veggies and the dressing together until well coated. Top with crumbled bacon just before serving.

Total carbs = 28
Per serving = 3.5 carbs
