Serve this salad with April's Low Carb Pulled Pork (see recipe links below for recipe).
Ingredients: 1 large cucumber
1 bunch green scallions (about eight to ten)
1 container (24 ounces) cottage cheese
1/4 cup mayonnaise
salt and pepper to taste
1 packet artificial sweetener (optional)
Instructions:

Makes 6 Servings

Wash and score the skin of the cucumber by dragging the tines of a fork down the sides lengthwise. Slice the cucumber into thin medallions, crosswise. The scoring will make a pretty scalloped design in the dark green edges of the slices. Chop the scallions, including the greens. Fold the scallions, mayo and cucumber into the cottage cheese. Add salt and pepper and sweetener to taste.

Total carbs = 24
Per serving = 4
