I like this recipe because the coolness of the cucumbers contrasts nicely with the creaminess of the sour cream and the bite of the horseradish. This makes a great salad or side dish.
To make this recipe low fat, simply substitute low or no fat sour cream for the real thing. You can also use plain yogurt. |
| Ingredients: |
2 medium cucumbers, sliced
2 teaspoons lemon juice 2 1/2 teaspoons prepared horseradish 1/2 cup sour cream 1/2 teaspoon dried or 1 1/2 teaspoons fresh dill |
| Instructions: | Mix together all ingredients except cucumbers. Stir cucumbers gently into mixture to coat. Chill for several hours. Serve on a bed of lettuce, if desired. |
