Author Notes: Here's a cool summer salad that goes great at cookouts or on the side of a light summer meal. The recipe was given to us by Amanda Formaro, editor of TheFamilyCorner.com, where you can find crafts, recipes, and other great articles.
Ingredients: Salad:
2 medium tomatoes, sliced
1/2 cucumber, sliced
1-2 tablespoons chopped fresh basil

Dressing:
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1/2 teaspoon sugar
1/4 teaspoon black pepper

Remaining Ingredients:
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan Cheese
Instructions: For salad, arrange tomato and cucumber slices on a large, flat plate. Sprinkle with basil. In a small bowl, whisk together dressing ingredients. Pour over tomatoes and cucumbers. Sprinkle with mozzarella and Parmesan. Cover and refrigerate until serving.
