Chicken and Cantaloupe Salad

Author Notes: Here's a great fruit and chicken salad that makes a perfect light healthy summer entree. To lower the fat content, substitute low or no fat sour cream.

Ingredients: 1 small cantaloupe
6 cups cubed, cooked chicken
2 cups chopped celery
2 cups seedless green or red grapes
3/4 cup sliced water chestnuts
1/3 cup finely chopped green onions
1/2 cup sour cream
1/2 cup plain yogurt
2 teaspoons curry powder
salt and pepper to taste
Instructions:

Cut melon in half, and remove seeds. Use a melon baller to scoop out melon balls and place in a large salad bowl. Add chicken, celery, green onion, grapes and water chestnuts.

Mix together, sour cream, yogurt, and curry powder. Toss with salad. Season with salt and pepper to taste.
