| Ingredients: |
3 cups couscous 2 scallions, thinly sliced 1 cucumber, seeded and finely diced 3/4 cup seedless grapes, cut in half 1/2 cup olive oil 3 tablespoons red wine vinegar 1 tablespoon curry powder 1/3 cup slivered toasted almonds salt and pepper to taste |

Cook couscous according to package directions. Combine the cooked couscous, scallions, cucumber and grapes in a bowl. Whisk together the oil, vinegar, curry powder, salt, and pepper, and pour over the couscous mixture. Toss gently to combine. Sprinkle with slivered almonds. Serve chilled or at room temperature. |
