Author Notes: A blaze of color, with simple ingredients creates this outstanding combination.
Ingredients: 1 (15-ounce) can black beans, drained and rinsed
1 (11-ounce) can golden sweet corn, drained
1 tomato, chopped
2 tablespoons chopped red onion
3 tablespoons lemon juice
2 tablespoons olive oil
salt and pepper to taste
Instructions: Combine black beans, corn, tomato, cilantro, red onion, lemon juice, olive oil, and salt and pepper to taste. Refrigerate until ready to serve.
