Author Notes: Lemon flavored olive oil (available in gourmet shops and well stocked grocery stores) is a versatile ingredient that you'll find yourself using constantly. In this recipe it takes a simple cabbage and carrot salad to new levels of flavor sophistication. Since this healthy salad uses no mayonnaise, it's perfect to back for a picnic or brown bag lunch.

 

Ingredients: 1/2 head green cabbage, shredded
1 large carrot, shredded
1/4 cup white wine vinegar or rice vinegar
2 tablespoons lemon flavored olive oil
salt and pepper to taste
Instructions: Combine cabbage, carrots and vinegar and mix well. Drizzle in lemon oil and mix well until all ingredients are well coated. Season to taste with salt and freshly ground black pepper.
