Author Notes: This recipe is a spa cuisine favorite at The Oaks in Ojai and The Palms in Palm Springs, and of its owner Sheila Cluff. Sheila loves this slaw because it travels well, making it perfect for picnics and pot lucks, just be sure to chill the salad and dressing separately until it's time to serve.
Ingredients: Salad:
1 1/2 cups cabbage, grated
1/2 cup oranges, sectioned and sliced
1/2 cup grapes, halved
1/4 cup celery, thinly sliced
1/2 cup red apple, cored and diced
6 large whole lettuce leaves

Dressing:
1/2 cup non-fat yogurt
1/2 teaspoon freshly grated lemon zest
1/2 teaspoon lemon juice
1/2 teaspoon honey
Instructions: 35 calories per serving
8 gram carb
trace (2%) fat

Combine all dressing ingredients and mix well. Toss together all salad ingredients except lettuce leaves. Just before serving, Toss salad with dressing and place each serving on a lettuce leaf.
