Author Notes: This winter combination provides a beautiful and tasty start to almost any meal. The silkiness of the avocado contrasts well with the grapefruit.
Ingredients: 8 cups spinach, washed and dried
1 large pink or white grapefruit, peeled and sectioned (save the remains)
1/2 avocado, sliced
2 tablespoons rice vinegar
1 teaspoon sweetener such as Sucanat™ or sugar
1 teaspoon tamari (or soy sauce)
2 tablespoons sesame seeds, toasted
Instructions:

Place spinach in a bowl or separate and divide among 4 individual plates. Arrange grapefruit slices and avocado over spinach.

To make dressing, squeeze juice out of leftover grapefruit and mix with rice vinegar, sweetener and tamari and set aside.

Pour sesame seeds into a blender. Grind until they are powder. Add the remaining salad dressing ingredients and blend. Pour over salad.
