This is an elegant salad of mixed greens that is a perfect first course for any dinner. The small amount of blue cheese gives it an extra blast of flavor, without adding a lot of extra fat or calories.

Ingredients: 2 cups mesclun or mixed salad greens
!/4 cup chopped walnuts, toasted
2 tablespoons blue cheese, crumbled

Dressing:
1 1/2 teaspoons lemon juice
1/8 cup white wine vinegar
1/4 cup olive oil
3 small garlic cloves finely minced or pressed.
salt and pepper to taste
one or two drops of hot sauce, such as Tabasco sauce
Instructions: Toss salad greens, walnuts and blue cheese together. Whisk together all dressing ingredients. Pour over salad. Toss and serve.
