Author Notes: Caprese is a traditional Italian combination of tomatoes, fresh mozzarella, and fresh basil. While it's usually served as a salad, we like to serve it on crusty bread or focaccia.
Ingredients: 2 crusty baguettes or 4 large crusty rolls or 4 servings focaccia bread
1/4 cup olive oil
1/3 cup fresh basil leaves, chiffonnade
4 ripe fresh tomatoes
8 ounces mozzarella cheese, thinly sliced

sliced kalamata olives (optional)
salt and fresh ground pepper to taste
Instructions: Cut bread in half. Layer sliced tomatoes and sliced cheese and (if desired) olives. Sprinkle basil over sandwiches. Drizzle with olive oil and season with salt and pepper.

So easy, but so good

This was so easy to make, but boy was it good.  Took it on a picnic last week and everyone raved about it.  Of course, it did help that I had tomatoes fresh from the garden.  It's just so simple, but with good olive  oil, and fresh basil and garden tomatoes, and a crusty baguette, the sum was much bigger than any of the parts.

 I didn't even use the olives, but I bet that's good too.  sometimes kalamatas are a bit strong for some people's tastes.  My nephew can't stand them, but he likes other kinds of olives.  He says they're too strong.  I personally live them and can't stand the canned black olives like you typically get at lower end US salad bars.  To each his own.
