Author Notes: I love pesto! This simple sauce gives everything an instant gourmet touch. The addition of goat cheese and sun dried tomatoes are icing on the cake.

Ingredients: 1 recipe Basic Pizza Dough (click here for recipe)
6 ounces grated mozzarella cheese
3 ounces goat cheese
6 sun dried tomatoes
1/3 cup pesto (click here for recipe)
1/3 pound shrimp, cooked and peeled
Instructions: Preheat oven to 400° F.

Reconstitute the sun dried tomatoes by pouring boiling water over them and allowing them to soak for about 15 minutes. Slice Reconstituted tomatoes thinly. Peel and devein the shrimp.

Roll out pizza dough. Cover dough evenly with pesto sauce. Spread mozzarella cheese on pizza leaving a 1/2 border for crust. Crumble goat cheese over pizza.  Sprinkle on sun dried tomatoes, then evenly spread out the shrimp.

Bake pizza for 10 to 15 minutes or until crust is lightly browned.

Remove pizza and let cool on a wire rack for 10 minutes before slicing.
