This recipe was given to us by Donna Flanders, who co-owns with her husband Harvey RV Vacation Planner, a service that offers custom RV vacation plans including trip routing, campground research, activity research, and itinerary, each based on the individual customer?s requirements. Prepackaged plans also available. Donna and Harvey do all the research, you have all the fun. Even though Donna came up with this recipe as part of an article she did for us on RV Cooking without Hookups (see related links below), it's also delicious prepared at home or over a campfire or any time you get the opportunity to cook outdoors. |
| Ingredients: |
cooked pasta for 2 people
1/2 pound prepacked smoked salmon selection of veggies -- pick 2 or 3 from this list: zucchini sweet bell peppers onions eggplant oil and vinegar salad dressing 1 small fresh tomato, chopped 1/3 cup grated parmesan cheese |
| Instructions: |
Prepare a medium grill. Slice veggies. Dip into the salad dressing and grill until soft, turning once. Heat the pasta in the microwave. Arrange pasta, 1/2 the grilled veggies and 1/2 the salmon (flaked) on a plate. Sprinkle with chopped tomato and parmesan cheese. |
