Author Notes: This pasta is simple to make and very rich! While you could use it as a main course, served with a salad, I like it better as a side dish.
Ingredients: 16 ounces dried pasta such as penne or rigatoni
1/2 cup crumbled bleu cheese
2 tablespoons Parmesan cheese
2 tablespoons butter
pepper to taste
1/4 teaspoons crushed red pepper (optional)
Instructions: Serves 4 as Main Course, 6 as Side Dish

Cook the pasta according to the package directions. Drain and return to pot. Add the remaining ingredients, stirring to combine and melt cheese. Serve immediately.
