Chef Casey Bell of Mezze Café and Cabaret in Grand Rapids, Michigan shared this recipe with us. This trendy downtown spot serves a huge variety of authentic Moroccan dishes along with Spanish tapas from their sister property San Chez Tapas Bistro next door. Serve this popular Middle Eastern garbanzo bean dip with pita bread triangles.

Ingredients: 1 can (15 ounces) garbanzo beans, drained, reserve liquid
1 tablespoon olive oil PLUS 1 teaspoon olive oil
1/2 lemon, juiced
1 medium garlic clove, minced
2 teaspoons tahini
salt to taste
pita bread
Instructions:

1. Puree all ingredients in a blender or food processor until as smooth as possible.

2. Add reserved liquid until desired consistency is reached.

3. Serve chilled with pita or other flat bread or favorite crackers.
