Mexican Style Bean Dip

Author Notes: With parties happening at the drop of a hat and friends and relatives dropping by, it's a good idea to stock up on dip recipes. Why? Because many dips can be quickly thrown together with ingredients already in your pantry or fridge. Paired with some crackers, bread or raw veggies, you can keep a hungry crowd happy for an entire evening.

Serve this dip with tortilla chips or veggies, Guacamole or Low Fat Guacamole and fresh Salsa
Ingredients: 1 can (15 ounces) pinto beans, rinsed and drained
1 med. fresh tomato, seeded
2 tablespoons lime juice
3 garlic cloves
2 scallions
1/3 cup cilantro
1/2 (more or less to taste) jalapeno pepper
salt and pepper to taste
Instructions: Makes About 2 Cups

Purée all ingredients in a food processor until smooth.
