| Author Notes: | Hummus is a wonderfully nutritious Middle Eastern food made from garbanzo beans and sesame tahini. Use it as a dip for raw veggies or pita bread. It also makes a terrific sandwich spread. My version is very garlicky, so if you don't like the "stinking rose" you might choose to cut back a bit on this ingredient. |
| Ingredients: |
3 cups cooked garbanzo beans (or use 2 cans 15 1/2 ounces each, rinsed and drained)
5-6 garlic cloves, minced 3 scallion or green onions, finely minced 1/3 cup tahini 1/4 cup lemon juice 2 tablespoons soy sauce salt, pepper and cayenne pepper to taste |
| Instructions: | Put all ingredients in a food processor or blender and purée. Serve as a dip or sandwich spread. |
