Author Notes: In addition to lots of great small space recipes, the book is especially great for novice RVers, new to packing and cooking in their rigs.
Ingredients: 4 chicken breasts, skinned
salt and coarse black pepper
1 cup crushed pecans (use a blender or food processor)
2 tablespoons sesame seeds
1 teaspoon paprika
Instructions: Preheat oven to 375° F. Grease a 13x9 inch glass baking dish.

Season chicken with salt and pepper. Combine crushed pecans and sesame seeds and paprika. Coat chicken with the nut mixture. Bake for about 1 hour or until chicken is cooked. If chicken pieces brown too quickly, cover pan with aluminum foil.
