| Author Notes: | I came up with this recipe while craving pizza on a low carb diet. While it has no crust, the house does smell remarkably like a pizza parlor while it's baking. I like to serve this chicken with Herb Tomato Sauce. |
| Ingredients: |
4 boneless, skinless chicken breasts
1 egg, beaten 1/2 cup grated Parmesan cheese 2 tablespoons Italian herbs 4 slices provolone cheese 1 teaspoon olive oil herb tomato sauce (click this link for recipe) |
| Instructions: |
Preheat oven to 425° F. degrees.
Place each chicken breast between 2 pieces of plastic wrap or waxed paper and pound with a mallet or side of a rolling pin to flatten slightly. Dip flattened chicken in beaten egg then roll in Parmesan/herb mixture to coat. Place coated chicken pieces in a greased 9x13 baking dish. Spray (or drizzle) lightly with olive oil. Bake for 20-25 minutes or until done. Place slices of provolone cheese over each breast during last 2-3 minutes of baking so cheese will melt. Serve topped with Herb Tomato Sauce. |
