Author Notes: This recipe comes to us from the Groves, Texas Chamber of Commerce, where each year they celebrate at their fabulous Pecan Festival.
Ingredients: 4 skinless boneless chicken breasts
1/4 cup honey
1/4 cup Dijon mustard
1 1/2 cups finely chopped pecans
Instructions: Preheat oven to 350°F.

Place each piece of chicken between two sheets of waxed paper; flatten to 1/4" thickness using a meat mallet or rolling pin. Set aside.

Combine honey and mustard and spread on both sides of chicken, then dredge chicken in chopped pecans.

Arrange chicken on a lightly greased, shallow baking pan. Bake for 30 minutes or until chicken is tender.
