Author Notes: These crispy fried chicken strips have no carbohydrates, but are oh so good. Parmesan and Romano cheeses form the crisp crust.  Make extra, these have a way of disappearing fast.
Ingredients: 2 skinless, boneless chicken breasts
1 egg, beaten
1/2 cup Parmesan cheese, grated
1/2 cup Romano cheese, grated
1 teaspoon pepper
1 teaspoon Italian seasonings
1/8 cup butter
1/8 cup olive oil
Instructions:

Serves 2 as Main Course, 4 as Appetizer

Combine the two cheeses (if you don't have both kinds, don't worry, the recipe works just fine with one variety), the pepper and Italian seasoning.

Slice chicken into long strips. Dip chicken pieces into the egg then dredge in the cheese mixture. Use more cheese as needed.

Heat butter and oil over medium-high heat and sauté chicken strips for about 4-5 minutes per side or until cooked through. Serve immediately.
