Author Notes: This easy three ingredient recipe makes a big impression on dinner guests.
Ingredients: 2 pound boneless pork loin roast
2 tablespoons spicy mustard
1 cup garlic croutons, crushed
Instructions: Serves 4-6, with leftovers

Heat oven to 400°F. Season roast with salt and pepper, place in shallow pan and roast for 30 minutes; remove from oven, spread surface with mustard and sprinkle with crouton crumbs. Return to oven and continue to roast for 10-15 minutes longer, until meat thermometer registers 155°F. Place croutons in plastic bag, roll with rolling pin until crushed.
