Author Notes: The book contains a fabulous collection of retro recipes for everything from snacks, sandwiches and desserts to blue plate specials.
Ingredients: 1 pound lean ground beef
1/2 teaspoon salt
dash of black pepper
3 teaspoons vegetable oil
1 large thinly sliced sweet onion (the milder the better)
1 tablespoon butter
8 slices thick rye bread
4 slices Monterey Jack cheese (thick sliced if possible)
Instructions: 1. In a mixing bowl, combine beef, salt and pepper.

Form into 4, half inch thick patties and fry in skillet about 4 minutes on each side. Set aside and keep warm.

Add oil to skillet and saute onions until transparent. Be careful not to brown or they may become bitter.

Drain any oil out of skillet.

Butter one side of 8 slices of bread and grill, Butter side down, in skillet.

6.
Place 4 slices of bread on a heat proof pan, Butter side up and top each with a burger patty, sauteed onions, and a slice of cheese.

7.
Broil sandwiches 5 inches from heat for about 2 minutes. Cheese should be melted but not runny.

Top each with remaining slices of bread. Serve hot with a nice side dish like baked beans or potato salad.
