Author Notes: This recipe puts a Southwestern twist on Macaroni and Cheese and it goes together in nothing flat.
Ingredients: 1 pound beef cubed steaks
1 tablespoon vegetable oil
1 medium onion, chopped
1 package (1 1/4 ounces) taco seasoning mix , or click here for recipe to make your own
2 cans (14-1/2 to 16 ounces each) tomatoes, diced, undrained
1-1/2 cups uncooked rotini (spiral) pasta
1/2 cup shredded cheddar cheese
Instructions: Cut beef steaks lengthwise into 1"-wide strips and then crosswise into 1" pieces.

Heat oil in Dutch oven over medium-high heat until hot. Add Beef and onion; cook and stir 3 minutes. Season with 1/4 teaspoon salt. Stir in taco seasoning, tomatoes, pasta and 1/2 cup water; bring to a boil. Reduce heat to low, cover tightly and simmer 20 minutes or until pasta is tender. Sprinkle with cheese before serving.
