Author Notes: This is marvelously simple to make, and quite delicious as well as healthy.  The soy milk gives a good supply of plant hormones and the cherries contain useful antioxidants.
Ingredients: 1 ounce butter
3 1/2 ounces flour
1/2 teaspoon freshly ground sea salt
1/2 pint soya milk
4 eggs
3 tablespoons honey
3 1/2 ounces kirsch
1 pound ripe tart black cherries
Instructions: Preheat the oven to 350° F and put a shallow baking dish containing the butter in the oven.

In a large bowl, mix the flour, salt, milk, eggs, honey and kirsch to smooth batter. When the oven is at the right temperature, take out the hot dish and tilt it at all angles to coat it well with the melted butter. Pour in the batter then sprinkle the cherries into the batter then return to the oven for about 35-40 minutes, until well puffed-up and colored. Serve warm and don't worry that it sinks as it cools - this is normal.
