This diabetic friendly recipe was given to us by diabetic cooking guru Marilyn Helton. A "Duff" is a traditional steamed or boiled pudding. and for many people they are reminiscent of Mom's comfort food at its finest. 1/4 cup 30% less fat Imperial brand margarine 1 cup all-purpose, unbleached flour 3 teaspoons baking powder 1/4 teaspoon salt 1/2 cup sugar 1 teaspoon cinnamon 1/8 teaspoon nutmeg 2/3 cup skim milk 1 teaspoon vanilla 4 to 6 peaches (about 1-1/2 pounds), peeled and thickly sliced |
