| Author Notes: | Cheri's uncle Lud was crazy for fresh Strawberry Pie. When she was growing up, Lud showing up at the house with a pie always meant that summer was really there. He continued bringing the desserts throughout the summer, until the last of the fresh berries were truly gone. He then mourned the loss of those pies throughout the cold Massachusetts autumn and winter months. In spring, hope would spring eternal that it would soon be strawberry season again! This pie is like one he used to bring. |
| Ingredients: |
1 quart strawberries 1 cup sugar 2 tablespoons cornstarch 2 tablespoons lemon juice red food coloring (optional) 1 baked pie shell (follow this link for recipe) 1 pint whipping cream |
| Instructions: |
Wash berries and hull (remove stems). Put one third of the berries in a sauce pan and crush. Mix sugar and cornstarch and add to crushed berries along with the lemon juice. Cook over medium heat until mixture thickens. Cool.
Cut remaining berries into slices and mix with the cooked mixture. Add a few drops of red food coloring, if desired, to the cooked mixture before adding the uncooked berries. Pour the entire mixture into baked the pie shell and chill completely. Whip the cream and serve pie topped with whipped cream. |
