Author Notes: This recipe comes to us from the Groves, Texas Chamber of Commerce, where each year they celebrate at their fabulous Pecan Festival.
Ingredients: Crust:
3 ounces cream cheese
1/2 cup butter
1 cup flour

Filling:
2 eggs
1 1/2 cups light brown sugar
2 dashes salt
2 teaspoons butter
2 teaspoons vanilla
1 1/3 cups chopped pecans
Instructions: Makes 1 pie

Preheat oven to 350° F.

For crust, mix ingredients together, chill and shape into a dough to fit your pan. (If you need more detailed instructions on pie crust making, click here.)

For filling, beat all ingredients, except the pecans, together until smooth. Fold in pecans. Pour filling into pie crust and bake for 50 minutes or until done. Cool before serving. Garnish with whipped cream or ice cream if desired.
