Author Notes: Editor Cheri Sicard came up with this twist on the classic key lime pie for her friend Wini, who loves coconut with inspiration from the classic Harry Nilsson song. This recipe is not only delicious, it's also ultra easy to make.
Ingredients: Crust:
3/4 cup crushed graham crackers
3/4 cup sweetened coconut
1/2 cup melted butter

Filling:
4 egg yolks
1 cup lime juice
1 14 ounces can sweetened condensed milk

Topping:
1/2 pint cream, whipped
1/3 cup toasted coconut
Instructions: Preheat oven to 350° F.

Mix crushed graham crackers and coconut together. Add melted butter and mix until well blended. Using fingers, press crust mixture into bottom and up the sides of a 9 inch pie pan. Bake crust for about 6 minutes until set.

Beat eggs yolks until foamy. Add lime juice and condensed milk and Beat until well mixed. Pour mixture into crust and Bake for twenty minutes. Cool completely. Top with whipped cream and sprinkle with toasted coconut.
