Rice Krispies Treats are Liz's Achille's heel of desserts. She loved them as a kid, craved them during pregnancy, and even to this day, finds it next to impossible to stop at just one! But they are made with 6 cups of Rice Krispies, a bag of marshmallows, and 3 tablespoons of butter, so we decided to add our own healthy snap, crackle, and pop to this time-honored recipe. Now each treat is rich in fiber, and heart healthy vitamin E, thanks to the high fiber cereal and sunflower seeds. Don't be concerned with the little bit of extra fat, because it's healthy fat from the sunflower seeds.

1 tablespoon butter 1 tablespoon canola oil 1 bag (10 1/2 ounces) miniature marshmallows, about 4 cups 1 1/2 cups high-fiber cereal, such as Post® 100% Bran or Trader Joe's® High-Fiber cereal 4 cups Rice Krispies® cereal 1/2 cup roasted sunflower seeds, unsalted | ||||||||||||||||||||||||
| Instructions: |
1. Lightly oil or coat a 9X13 inch baking pan with nonstick cooking spray and set aside. 2. Heat the butter and oil in a large saucepan over low heat. When the butter is melted, add the marshmallows and stir until completely melted. Remove from the heat. 3. Add the cereals and the sunflower seeds and stir until well coated. 4. Press the mixture evenly into the baking pan using wax paper, a buttered spatula, or your buttered hands. Cool at room temperature and cut into 12 squares. Store leftovers in a plastic, airtight container.
