Author Notes: Heidi Ott, owner of the Crafter's Community web site, shared this decadent truffle recipe with us.
Ingredients: 8 ounces cream cheese, softened
3 tablespoons instant coffee granules
2 teaspoons water
1 pound good dark chocolate
cocoa confectionery coating
white confectionery coating, optional
Instructions:

Makes about 5 dozen

In a microwave-safe bowl or double boiler, melt chocolate. Add cream cheese, coffee and water; mix well. chill until firm enough to shape. Shape into 1" balls and place on a waxed paper-lined cookie sheet. Chill for 1-2 hours or until firm. Melt chocolate coating in microwave-safe bowl or double boiler. Dip balls and place on waxed paper to harden. If desired, melt white coating and drizzle over truffles.

This looks so good and easy! But I think I will dissolve the 'instant coffee granules' in the water first....I tried using instant coffee granules in a chocolate recipe before but tiny pieces remained...those pieces tasted too bitter...but the next time, I dissolved them first and it tasted great!
