Here is a classic recipe that can be used for a variety of purposes. Serve it plain, top with fruit or ice cream, or use it in a variety of recipes. One of my favorite ways to use Pound Cake is in a trifle, a simple yet impressive dessert that feeds a big crowd. |
| Ingredients: |
1 pound butter 1 pound (4 cups) sifted cake flour 10 eggs, separated 1 pound (2 cups) sugar 1 teaspoon vanilla |
| Instructions: |
Preheat oven to 325°F. Grease and flour 2 loaf pans.
Beat egg whites until stiff peaks form, set aside. Cream butter until fluffy. Mix in flour until mixture is mealy. Set aside. Beat egg yolks, sugar and vanilla until thick and fluffy. Mix in butter and flour mixture gradually, beating thoroughly. Fold in beaten egg whites and beat for 3-5 minutes. Pour batter into prepared pans and bake for about 1 1/4 hours or until tops are golden brown and cake tester comes out clean. |
