| Author Notes: | These cookies are great because they please both camps of cookie lover: the soft and chewy type and the crispy type. For soft cookies, loosely cover cooled cookies with plastic wrap. For crisp cookies, store in an airtight container. |
| Ingredients: |
1 cup butter 1 cup brown sugar, packed 1 cup white sugar 1 teaspoon salt 1 teaspoon vanilla 2 eggs 1 1/2 cups flour 3 cups oatmeal 1 teaspoon baking soda 1 cup dates, pitted and chopped (kitchen scissors make quick work of this) 1/2 cup chopped nuts (optional) |
| Instructions: |
Preheat oven to 375° F.
Combine dry ingredients, dates and nuts, set aside. Cream sugar and butter, beat in eggs and vanilla. Mix in remaining ingredients until well combined. Form dough into 2 or 3 rolls, wrap and chill for at least an hour. Cut rolls into slices and bake for 10-15 minutes. |
