Recipe for low fat Apple Cabbage Slaw Veronica. This recipe is a spa cuisine favorite at The Oaks in Ojai and The Palms in Palm Springs, and of its owner Sheila Cluff.
Ingredients
- Salad:
- 1 1/2 cups cabbage, grated
- 1/2 cup oranges, sectioned and sliced
- 1/2 cup grapes, halved
- 1/4 cup celery, thinly sliced
- 1/2 cup red apple, cored and diced
- 6 large whole lettuce leaves
- Dressing:
- 1/2 cup non-fat yogurt
- 1/2 teaspoon freshly grated lemon zest
- 1/2 teaspoon lemon juice
- 1/2 teaspoon honey
Directions
- 35 calories per serving
- 8 gram carb
- Combine all dressing ingredients and mix well. Toss together all salad ingredients except lettuce leaves. Just before serving, Toss salad with dressing and place each serving on a lettuce leaf.
