Goat Cheese, Roasted
Pepper and Basil Appetizers

The first time I ever had this incredible, appetizer
was at a dinner prepared by Jerry Casale (of Devo fame).
Most "spuds" are not aware that in addition to being
a rock and roll legend, Jerry is also a gourmet chef
and wine expert.

The combination of marinated goat cheese, roasted peppers and fresh
basil is perfect in its simplicity. I usually keep the ingredients around
the house for a quick snack or for "instant entertaining" when guests
drop by. These ingredients also make a great Italian "Panini" sandwich.
Serves 6-8 as appetizer

Slice baguette into 1 inch slices. Spread a layer of
goat cheese onto each slice. Top with a strip or two
of roasted pepper and a few strips of fresh basil.
If you prefer to serve this as an entree sandwich, just slice
your baguette lengthwise, spread with goat cheese and top with roasted
peppers and fresh basil.
