Cheri's Hummus  


Note from Cheri:
Hummus is a wonderfully nutritious Middle Eastern food made from garbanzo beans and sesame tahini. Use it as a dip for raw veggies or pita bread. It also makes a terrific sandwich spread. My version is very garlicky, so if you don't like the "stinking rose" you might choose to cut back a bit on this ingredient.

3 C cooked garbanzo beans (or use 2 cans 15 1/2 oz. each, rinsed and drained)
5-6 garlic cloves, minced
3 scallion or green onions, finely minced
1/3 C tahini
1/4 C lemon juice
2 T soy sauce
salt, pepper and cayenne pepper to taste

Serves 8

Put all ingredients in a food processor or blender and purée. Serve as a dip or sandwich spread.
