Meatloaf Madness 1st Prize -- Traditional Karen Shaffer - Ketchikan Alaska

"When I younger and living at home my mother would make meatloaf. It was one of those meals that my brothers and my sister and myself dreaded. We never said anything to my mother as we did not want to hurt her feelings.

When I got married and was now the cook, I experimented. To my surprise my recipe was a success! Well, after a few tries anyway.

There have been days when my husband has brought a friend home for dinner and they have even asked for seconds.  Now when I make meatloaf the kids and my husband can smell it cooking and they can't wait for dinner. There are never any leftovers, which makes me happy because I know meatloaf night in our house is a pleasant meal."
Ingredients: 1 1/2 pounds ground beef
1/2 pound ground pork
1/2 cup diced onion
1/2 cup diced celery
5 -6 slices bacon
2 eggs
1/4 cup Worcestershire sauce
1/2 teaspoon parsley
3 slices Italian bread
honey barbecue sauce
salt and pepper
Instructions:

Preheat oven to 350°F.

Cook bacon then remove from pan, reserving some of the grease. Sauté onion and celery briefly in small amount of bacon grease until soft.

Mix all ingredients together, except for crumbled bacon and bread. Spray loaf pan with cooking spray. Place bread on bottom of pan. Spread meatloaf mix evenly in pan. Cover with foil and bake at 350 for 1 hr & 20 minutes.

Remove from oven and drain carefully. Spread with honey bbq sauce and crumbled bacon. Place in oven for about 10-15 minutes, just enough to glaze. Remove from oven, let stand for 5 minutes then enjoy!
