Bloody Eyeball Hors d'Oeuvres for Halloween

Author Notes: These little snacks, made from olive stuffed radishes will get quite a reaction when artfully displayed on your Halloween buffet. They're really un-nerving!

You can also freeze these "eyeballs" to use in cocktails like our Bloody Eyeball Martini.
Ingredients: per eyeball:
1 radish
1 pimiento stuffed green olive
Instructions: To make "eyeballs," peel radishes, leaving thin streaks of red skin on to represent blood vessels. Using the tip of the vegetable peeler or a small, knife, carefully scoop out a small hole in each radish, roughly the size of an olive. Stuff a green olive, pimiento side out, in each hole. Arrange "eyeballs" on serving plate.
