Note: The cornhusks are used to enhance the visual appearance of this dish and are NOT edible. You can also make this dish by omitting the corn husks. Prepare mashed potatoes using your favorite recipe, or click here for ours. Place an unopened cornhusk on a plate and put a large dollop (about 3/4 cup) in the center of the husk. Gently mold potatoes into the oblong shape of a mummy. Select vegetables to create the mummy's features and choose the approximate location of where to place. Carefully press the vegetables into the potatoes. Serve immediately. |
