Vegtable and Cheese Corundas-Tamales

Corundas are a style of tamales that are wrapped up in little pouches. Unlike other tamales which have sauces and fillings, the vegetables and cheese are mixed right into the masa dough for these, making them even easier to assemble.

Ingredients: 1 recipe masa harina masa (see recipe links below)
OR
1/2 recipe fresh masa

about 5 cups vegetables -- mix and match your choice of corn, green onions, roasted red pepper and black beans

1 1/4 pounds grated cheddar or Monterey Jack cheese

about 36 dried corn husks, prepared for tamales
Instructions:

Makes About 3 Dozen tamales

Prepare the masa.

In a large bowl, combine the masa with the vegetables and grated cheese.

Assemble the tamales by placing about 1/3 cup masa in the center of the smooth side of a corn husk, and wrap corunda style. Steam. See links below for detailed photo instructions.
