Limes are a versatile addition to many recipes. Not only that, in season or if you live near a lime growing region, they are very inexpensive.
Limes add essential flavor elements to cuisines the world over, from Mexico to Thailand to the good old USA.There are many varieties of limes. While it's true that one variety may be better suited to certain recipes than others, you can almost always get away with substituting one variety for another. You may need more or less fruit, depending on the variety. Nonetheless, your recipes should taste fine.
Handy Hints
When juicing any type of citrus fruit, roll the fruit around before cutting it open. This will result in more juice. You can also microwave your fruit for a half minute or so in order to get the juice flowing.
