Author Notes: This traditional Irish side dish recipe was given to us by our friend Brenda Hyde. Serve it for St. Patrick's Day!

Ingredients: 8 medium potatoes
1/2 cup milk
5 tablespoons butter
one bunch scallions or green onions, chopped
salt and pepper to taste
Instructions: Peel and cube potatoes and boil in salted water until tender. Drain and mash slightly. In a small pan, heat milk and butter until butter is melted. Add chopped scallions. Fold mixture into the potatoes until well blended. Potatoes will be still be somewhat lumpy. Season with salt and pepper.
