Let's face it. Thanksgiving dinner is a literal orgy of eating.
With the main event still to come, it's a good idea to keep it
simple to start. A light green salad is perfect. Use a red wine
vinaigrette and top it off with dried cranberries and pine nuts.
You could also start with a hot soup. Some of my most treasured
Thanksgiving memories are waking up early in the morning to find
my father already busily working away at the soup pot. He always
made chicken or turkey soup. Of course, we could look forward to
another pot the following week made from the big day's turkey carcass.
It didn't matter. Everyone loved my Dad's soups.
In retrospect, Dad could have made something different for some
variety. Perhaps something lighter, like our Curried Pear & Butternut
Squash Soup or perhaps even Pumkin Bisque would have been a nice
change.
