At my mother's insistence, vegetable side dishes were an important
part of every Thanksgiving meal. She was a bit fanatical about it.
Even after I was grown and living away from home, she would always
call and double check what was on my Thanksgiving menu. My sisters,
living in different parts of the country, would get a similar grilling.
One year Mom nagged my sister Linda and I so much about the lack
green vegetables on our table, we have opened an annual ceremonial
can of peas in her honor ever since --knowing full well that nobody
will eat them.
The point is, Mom thought side dishes important enough to merit
a few dollars spent with Ma Bell to insure we were all had the "proper"
Thanksgiving dinner. I've since moved beyond the obligatory "can
of peas," but side dishes still play an important part of the Thanksgiving
meal. Here are some more inspired recipes. Make some to round out
your Thanksgiving feast.
